Leftover lunch

Lunch today focused around some leftovers in my fridge (getting way too many random tupperware containers in there with bits of food). To my leftover roasted potato wedges and steamed broccoli, I added some Veggie Patch Spinach Nuggets from the freezer. I also grated some cheese on the broccoli, and used my new Bolthouse Farms Creamy Honey Mustard Yogurt Dressing as a dip for the wedges & nuggets.

This is the first time having the honey mustard dressing, and it’s awesome! I love that it’s only 25 kcal for 1 tbsp, and it doesn’t have any “weird” ingredients. They make a yogurt ranch dressing and caesar dressing that I might have to check out next time I need either of those dressings.

I had a little dessert after lunch – some of those beautiful strawberries I picked up at The Root Cellar yesterday. Pretty good for strawberries in October!

Now that hockey is over, I might digest a little bit longer, then head to the gym for some cardio action. My upper body is still pretty sore from the weights I did yesterday, so I don’t want to do any of that today. Might do a pilates abs video later on as well if I feel ambitious. Laundry is almost done though! Getting excited for dinner tonight too…stay tuned ;)

I had those spinach nuggets last week. Sooooo good, right? I recommend dunking them in BBQ Sauce, too.

Hangry Pants – agreed on the spinach nuggets being good! They are such a nice change, and handy to keep in the freezer. Never thought about BBQ sauce – I don’t usually eat it alot, but I’ll keep that in mind for next time. I also like them with sweet chili sauce :D

That meal looks so good. And in reading this post of yours I just remembered that I have some of those nuggets in my freezer that I got AGES ago! Thanks for the reminder. I’ll have to pull em out some time this week.
