Dinner was super easy to get ready this evening. It was leftovers!
I heated up a serving of the Thai Prawn Red Curry I made on Monday. I threw in a few spears of broccoli that I had leftover from last night, and I swear, there is a small bed of jasmine rice hiding under all that deliciousness!
Still flavourful and lovely. My basil on top is looking a little sad though – apparently it doesn’t keep too well in the fridge. Oh well.
After some phone time with the family, and some hockey watching (yeah, I know, my team isn’t playing, but I’ll watch any playoff game), it was time to hit up the gym. I went with 45 min on the stair climber, and 20 min of lower body strength training. I was not happy with my heart rate this evening though. It was all normal on the stair climber, but it didn’t recover with the speed that it normally does. I don’t like it when that happens – it stresses me out. Fortunately, it doesn’t happen that often, but I’ve had issues before at skating with my heart not regulating itself properly, so you can see why I get a little on the anxious side. But it was all good, and found it’s way back to the norm.
I knew exactly what I was going to have as a snack/dessert when I got home.
Yes, I still had a small slice of my spectacular carrot cake (with white chocolate cream cheese frosting) left from Easter in my fridge. And it was still freakin’ awesome. You better believe I savoured every last bite! I so want to bake another one, because it’s just that good.
Well, I think I’m going to chill on the couch, or possibly in bed, with something to read. Nighty night!
