Seeing as it’s going to be another hot & sunny day, I thought some tropical oats were in order. The leftover coconut milk in the fridge may have also influence the decision a little
First, I blended up the following:
- 1/2 cup light coconut milk, water
- 1/3 block Mori-Nu Firm Silken tofu
Then I added:
- 1/2 cup oats
- dried mango
- zest of half a lime
- shredded coconut
After cooking:
- juice of half a lime
- flax seed
- mixed dried tropical fruit
- macadamia nuts
What’s more tropical that a glass of Happy Planet Mango Peach Party?
Oh, you better believe it was all sorts of good. And so creamy from the coconut milk and silken tofu.
While I’m off for the usual Saturday grocery shop, here’s a little something for all you race runners out there. Perhaps next year you should consider the Wreck Beach Bare Buns Run – just don’t forget the sunscreen

BARE run, that sounds ridiculous. I’d consider it if there were enough people running so I could ‘bare’y myself in the crowd… haha.
Coconut milk sounds like it was be fantastic in oats!
You wouldn’t catch me dead running/walking/biking/hiking or anything like that naked! Yowzers, that takes guts!
