Carrot Spinach Chickpea BBQ Pizza

After making a carrot puree when I had my wisdom teeth out, that was spectacular I might add, I’ve been looking for ways to include it in other foods. It seemed like the perfect base for a pizza! I’m always looking for alternative sauces for pizza, instead of the traditional tomato. The rest of the toppings were really just inspired by what was in my fridge. And I had to make sure to include my favourite pizza topping – BBQ sauce!

Carrot Spinach Chickpea BBQ Pizza

Makes 1 individual size pizza

Ingredients

  • 1 Flatout Multigrain Wrap
  • 1/4 cup pureed cooked carrot (I season mine with salt, pepper, onion powder, and a touch of butter)

  • 1/4 cup frozen spinach, thawed, drained, and chopped
  • 1/4 cup chickpeas, slightly smashed
  • 1.5 oz shredded cheese (I used a mixture of mozzarella and cheddar)
  • extra BBQ sauce for dipping/drizzling (optional)

Directions

1. Preheat oven to 375 degree F.

6. Bake for 10 min, or until the cheese is melted and the edges of the crust are browned & crisp. Allow to sit for a few minutes before cutting. Serve or drizzle with extra BBQ sauce, if using. Enjoy!

Feel free to use any sort of crust you like – a different kind of wrap, tortilla, homemade pizza crust. And you can definitely mix up the toppings – I think chicken would be awesome on this, as well as onions or mushrooms.
