After making a carrot puree when I had my wisdom teeth out, that was spectacular I might add, I’ve been looking for ways to include it in other foods. It seemed like the perfect base for a pizza! I’m always looking for alternative sauces for pizza, instead of the traditional tomato. The rest of the toppings were really just inspired by what was in my fridge. And I had to make sure to include my favourite pizza topping – BBQ sauce!
Carrot Spinach Chickpea BBQ Pizza
Makes 1 individual size pizza
Ingredients
- 1 Flatout Multigrain Wrap
- 1/4 cup pureed cooked carrot (I season mine with salt, pepper, onion powder, and a touch of butter)
- 1 1/2 tbsp BBQ sauce (I use Diana Sauce Gourmet Honey Garlic BBQ Sauce)
- 1/4 cup frozen spinach, thawed, drained, and chopped
- 1/4 cup chickpeas, slightly smashed
- 1.5 oz shredded cheese (I used a mixture of mozzarella and cheddar)
- extra BBQ sauce for dipping/drizzling (optional)
Directions
1. Preheat oven to 375 degree F.
2. Spread wrap with carrot puree.
3. Spread BBQ sauce over carrot puree.
4. Add spinach and smashed chickpeas.
5. Cover with cheese.
6. Bake for 10 min, or until the cheese is melted and the edges of the crust are browned & crisp. Allow to sit for a few minutes before cutting. Serve or drizzle with extra BBQ sauce, if using. Enjoy!
Feel free to use any sort of crust you like – a different kind of wrap, tortilla, homemade pizza crust. And you can definitely mix up the toppings – I think chicken would be awesome on this, as well as onions or mushrooms.
