Tropical Escape Blended Treat

I really need to come up with a better name for these things! But here is another creation born out of the necessity to eat only soft or blended foods while recovery from wisdom teeth surgery. This one will bring a taste of the tropics to you, even in the dead of winter :D

Tropical Escape Blended Treat

Serves 1

  • 1/2 cup vanilla ice cream
  • 1/2 cup frozen mango pieces
  • 1/4 cup pineapple chunks (I used canned, but fresh or frozen would be best)
  • 1/2 tsp coconut extract
  • 1/4 cup skim milk
  • mango chunks, shredded coconut – for garnish (optional)

Directions

1. Add all ingredients to a container (if using an immersion blender) or to your stand up blender.

2. Whiz them up until creamy, thick, and smooth. You may need to add more milk, depending on your blender.

3. Pour into a glass, garnish if desired, and enjoy! I like to use a martini glass, to make it a little fancy.

If you have a coconut ice cream, it would be awesome to use in this. Or add some other tropical fruits, like frozen banana!
