Merry Christmas everyone! I thought as a little Christmas present to all of you, I would share the recipe for the biscotti I made as a Christmas present for my sister 🙂 I have based my recipe off the biscotti recipes from the cookbook One Smart Cookie by Julie Van Rosendaal. I highly recommend the book – excellent cookie recipes!
Double Chocolate Mint Biscotti

Directions
1. Preheat oven 350 degrees F.
2. In a large bowl, combine flour, sugar, cocoa, baking soda, salt, and chocolate chips.
3. In another bowl, combine eggs/white, peppermint extract, and water.
4. Add egg mixture along with toasted almonds to the flour mixture. Stir by hand until just combine – dough will still be a bit crumbly.
5. Turn dough onto a lightly floured surface. Shape into two 8″ logs. Place on an ungreased cookie sheet, 2-3″ apart. Flatten each into a rectangle approximately 3″ across.
6. Bake for 25 – 30 min, until firm and cracked on top. Transfer to wire rack to cool for 15 min. Reduce the oven temperature to 275 degree F.
7. Slice the cooled logs diagonally into 1/2 – 3/4″ tick slices with a serrated knife. Place biscotti cut side down on cookie sheet. Bake for 20 min, then turn over biscotti and bake for another 20 min. Transfer to a wire rack to cool.
8. To make glaze, combine icing sugar, extract, milk, and food colouring (if using) in a bowl. Drizzle or brush over cooled biscotti.
9. Once glaze is dried, drizzle with melted mint chocolate. Allow to harden, then enjoy!
